How to make a delicious Pudim de Leite / Caramelo (Milk or Caramel Pudding)

One of the most traditional brazilian dessert recipes, the Pudim de Leite is present in almost every dessert table. It’s very easy to prepare it!!

Here are the steps:

Ingredientes: Ingredients:
A. Calda de caramelo: A. Caramel sauce:
1 ½ xícara de açúcar 1 ½  cups of sugar
2 xícaras de água 2 cups of water
A. Pudim: A. Pudding:
1 lata de leite condensado 1 can of sweetened condensed milk
1 lata de leite (use a lata do leite condensado para medir o leite) 1 can of milk (use the can from the condensed milk to measure the milk)
4-5 ovos 4-5 eggs
Modo de fazer: Preparation:
A. Calda de caramelo: A. Caramel sauce:
1. Derreta o açúcar (em fogo baixo) numa panela. 1. Melt the sugar (over low heat) in a pan. 
2. Adicione a água e deixe ferver até ficar com a consistência de caramelo. 2. Add the water and bring to a boil until it forms a caramel syrup.
3. Despeje o caramelo na fôrma e esparrame o caramelo virando a fôrma de todos os lados. 3. Pour the caramel into the mold and spread it by rotating the mold.
B. Pudim: B. Pudding:
1. Bata todos os ingredientes no liquidificador. 1. Blend all the ingredients in the blender.
2. Despeje a mistura numa fôrma de pudim caramelizada. 2. Pour the mixture in a caramelised pudding mold.  
3. Leve o pudim para assar em banho-maria (160-180°C) por 1 hora -1 hora e meia ou até o pudim ficar firme. 3. Bake the pudding in a water bath (330-350F) for 1 hour – 1 ½ hour or until the pudding is firm.
4. Deixe o pudim esfriar bem e coloque o pudim na geladeira. 4. Let the pudding cool down completely and put the pudding in the fridge.
5. Desenforme o pudim quando estiver bem gelado e sirva. 5. Remove the pudding from the mold when it is really cold and serve.


  • In Brazil, “pudim de leite” is also known as “pudim de leite condensado”,  “pudim de leite moça” or “”pudim de caramelo”.
  • You can either use a medium size mold or small molds. If you use small molds, the baking time will be shorter.
  • You don’t need a steam pudding mold. A regular pudding mold is also okay. Put the pudding mold in a baking dish filled with water.
  • There is no need to cover the mold with a lid as long you bake the pudding under low/medium heat.
  • When you make the caramel, rotate the pan and don’t let the sugar burn too much, otherwise the sauce will be bitter.
  • You can find sweetened condensed milk in Brazilian supermarkets, in Asian grocery stores and in deli shops. If you can’t find it, you can use evaporated milk (unsweetened condensed milk) and add sugar (6-8 tablespoons) to taste.

Chapada Diamantina, Bahia State

Chapada Diamantina is a region of Bahia state, in the Northeast of Brazil. The vegetation is fantastic, composed, specially, by species from semi-arid Caatinga. The total area reaches 38.000 km².   • The three highest points in the state of Bahia are located in the Chapada Diamantina. Pico das Almas which is 1,958 meters (6,423.8 feet) above sea level, The Itobira which is 1,970 meters (6,463 feet) and the Pico do Barbado which is 2,080 meter (6,824 feet). The water of the rivers in the Chapada has a golden coloring. This is due to organic materials in suspension. The rivers that pass through the forests receive organic materials such as leaves and other foilage matters. This organic water is good for the health – skin, hair, digestive system, etc.

One of the theories for the existence of diamonds in Brazil is that when Brazil and Africa were still connected as one continent, the errosive rains and winds washed the African diamonds down river. The Chapada Diamantina used to be the ocean floor and when the area where the Atlantic Ocean is today collapsed, it pushed up this region, creating the Chapada Diamantina.

The Girl from Ipanema

The song was inspired by Heloísa Eneida Menezes Paes Pinto (now Helô Pinheiro), a seventeen-year-old girl at that time. – Heloísa Pinheiro

Gramado, Rio Grande do Sul




Gramado is a municipality and small touristic town, in the state of Rio Grande do Sul (RS). Well known by its events, as Gramado’s Christmas and Gramado’s Film Festival. Famous by good quality chocolate production and its cold weather (average maximum of 22°C in the summer and, in winter, the temperature may reach 0°C).
